Today we lined most of the building with a second vapor barrier: large sheets of plastic that help keep the inside of the building from being as wet as the outside. We then sealed it and got most of it taped as well. Once we finish this phase, we can begin hanging drywall and installing the ceiling.

Today we lined most of the building with a second vapor barrier: large sheets of plastic that help keep the inside of the building from being as wet as the outside. I too several years ago applied a plastic vapor barrier in new construction having a vaulted ceiling. Only problem was, condensation occurred inside the plastic and I had to redo. Maybe you have an explanation?
